This E-seminar, jointly authored by Simon Kelly (IAEA) and Philip Dunn (LGC), will introduce the viewer to the application of isotope ratio mass spectrometry (IRMS) for use with food authenticity, and quality testing. Detail of both the theory and application of the technique will be provided, along with the scope and limitations. The importance of the availability of robust isotope ratio databases is emphasised, along with guidance and best practice for use of the technique in the analysis of food authenticity. In addition to the information provided by the E-seminar, links to sources of additional information are provided.
